Spanish omelette my way!


I really love my version of the traditional Spanish omelette. It is easy. It is delicious and it is healthy and it only takes about 15 min.to make it :)
You will need for a portion for 2:


                                     5 medium eggs
                                      few mushrooms 
                                       half a broccoli 
                                     2 cloves of garlic
                                       sea salt
                                    2 tablespoons of  double cream
                                    black pepper
                                    few leaves of fresh basil
                                    olive oil for frying

Slice the potatoes thinly and fry separately until golden.



And do the same with mushrooms.


Chop the broccoli into small pieces and fry with chopped garlic until soft.




Once you have all the veggies done you can put them all together into the  frying pan.













In the meantime mix the eggs and cream and add some chopped basil, salt and pepper.
Pour the eggs on top of the veggies and make sure they are all well covered in the mixture. Cook on low heat for few minutes until you see the eggs on the bottom have settled.

Sprinkle a little bit more of that fresh basil on the top.


Grill it until nicely golden.


 I usually will have it with a little bit of  mayonnaise and glass of red wine :)
